Some traditional variations of carnitas call for coca cola, you could try root beer as a substitute. Carnitas aren't pulled pork per se, but a variation of shoulder prep. Or you could make a grape jelly/jalapeno glaze with like a southwest rub, get the whole sweet heat thing going for pulled pork.

Try a finishing sauce instead of traditional KC bbq sauce

Before I reply, are you open to Carolina style BBQ. Many people don't like it because they grew up of the shit Texas craps out, but if you're open minded, it's still the best out there IMO..

My favorite use is for pork chile verde. Make the following sauce, and when your butt is done smoking, and/or crockpotting, pull it or chunk it up, slather it in this sauce, and serve with tortillas and pico de gallo. If you decide to crock pot it, just use the sauce in the crock pot while the pork cooks.
10 tomatillos, roasted 4 cloves garlic roasted one onion diced juice of two limes 10 green chilis roasted and peeled (what type you use will determine the heat). Anaheim or poblanl for mild, or ancho or new mexico for more heat. one jalapeno, roasted Salt, pepper, cumin to taste Throw all the ingredients into a blender. Blend until smooth. Pour into the crockpot with your butt. Cook until you can pull the bone out of the butt. pull the meat and mix with the sauce. Delicious! |

Another version would be to do an asian thing and serve in lettuce wraps or rice paper wraps.
Cook the but, then mix in the following suace 1 cup soy sauce 1/2 cup rice wine vinegar 2 tblsp sugar 2 tblsp fresh grated ginger 2 cloves fresh grated garlic 2 tablespoons roasted sesame seeds. 1 tablespoon sesame oil 1 cup chopped cilantro juice of one lime Mix this in with your pulled pork. Then serve with lettuce leaves as wraps. |
