Poor Man's Lobster (Cod)
---------- Recipe via Meal-Master (tm) v8.02

Title: POOR MAN'S LOBSTER
Categories: Main dish
Yield: 4 servings

3 qt Water
1/2 c Salt
1/2 c Sugar
2 Pounds of cod, cut into 6 Or 8 pieces
**Or cube the cod***
Butter

Bring water, salt and sugar to boiling; remove from heat and add cod. Cover
and let stand for 15 minutes. Drain carefully; pat dry with paper towels.
Place cod on foil lined broiler pan or 15x10x1 inch pan. Butter generously;
**optional step**broil 3 to 4 inches from heat until lightly browned.**optional step**
Serve immediately with melted butter.





We had this a couple of weeks ago and it turned out really great. A guy at work I know suggested it because the kids and I don't care for fish, but don't mind shellfish. I recommend it to anyone who likes lobster. Serve it on angel hair pasta with a white sauce.

I make this all the time. However, I leave out the salt and sugar and substitute coffee for cod. After boiling, its pretty much ready to go. I don't mess with the paper towels, butter or baking.
