Dad uses tomatoes, an assortment of peppers he grows (jalepeno, tobasco, red chile, etc) onions, garlic, cilantro, and extra virgin olive oil. I couldn't tell you exactly how much of each though.

I use 3 vine tomatoes for every whole jalepeno. I fire roast the peppers, skin, seed, and chop them. I use 2-3 cloves of garlic, chopped. I'll use 2-3 Roma tomatoes to add a little thickness. Salt, fresh lime juice, a handful of chopped cilantro and onion.
Sweat chopped onion and garlic. Add tomatoes and peppers. Cook about 10 minutes. Add salt, lime juice, and cilantro in food processor. |

I'm usually a do it all from scratch kind of guy, but recently found that Mccormick makes a salsa mix that you add to 2 chopped tomatos. It is really good and real simple. Otherwise, if you are wanting to make your own from scratch, make it a pico type salsa.
dice up 4 tomatos dice up 1 medium onion mince up 2 jalapenos grate 2 cloves garlic juice from 2 fresh squeezed limes one bunch of chopped cilantro salt and pepper to taste Mix all ingredients. Let sit in fridge for a few hours. Serve as you would any salsa. Beats the hell out of anything cooked |

Damn, I guess some people want to get all crazy and such with making salsa. I like my salsa a tad less "Bobby Flay'ed" and more grocery store-esque.
4 large tomatoes(wash the gel and seed out) 1 del monte can fire roasted tomatoes 1 medium onion 1 small can green chiles half bunch of cilantro(chopped) 2 cloves fresh garlic 1-2 relleno peppers(deseeded and chopped) 2 fresh squeezed limes splash of lemon juice tsp salt dash of cumin( a little goes a long way) tsp pepper blend together in blender |

This one is pretty good, a little sweet (the mango), and a little heat (chipotle and adobo).
Mango-Chipotle Salsa 4 springs cilantro, chop leaves, discard stems 1/2 cup white onion, diced 2 cloves garlic, chopped 4 Haas avocados, peeled and diced 2 mangoes, peeled and diced 4 medium tomatoes, diced 1-2 chipotle chile(s), chopped 1-2 teaspoons adobo sauce 1 teaspoon kosher or sea salt 2 tablespoons, freshly squeezed lime juice Mix cilantro, onion, chipotle chile, garlic and salt in a bowl Gently stir in tomatoes, avocado, and mango Drizzle with lime juice and adobo sauce, and stir again Taste and adjust seasoning |
