Without knowing the first thing about your set up... I would think you would want to plug it, via HDMI, directly into the projector.
Now, assuming your projector has an audio out jack, I would then run a cord from the audio out back into the sound board. |

You can run video and audio both via AppleTV HDMI to the projector. You can then either run audio from the AppleTV's optical audio out, or the projector's coax audio out.

So then it makes more sense to hang the Apple TV with the projector, right? I'm assuming the remote will be able to reach that...we're talking probably 40-50 feet from the stage to the projector/Apple TV.

40-50 feet? Nah, I wouldn't count on that distance with the bluetooth remote. It might work depending on the room and any bluetooth interference. Would need tested with a full house, other people phone's bluetooth could affect it.
You can control it with an iPhone or iPad via wifi though too. Better range.
