Cooking with culinary foam
Anybody have any experience making foam/air sauces? I am about to go get supplies and start experimenting and thought it may be best to get advice BEFORE I do anything...

You take a liquid (fattier the better) and add lecithin then use a hand blender to whip into a foam consistency.

I've seen guys use them on the food network in different competitive settings. The judges are rarely impressed. It seems they are usually fruit based, but I think they can go the savory route also.
