Cooking with culinary foam
Anybody have any experience making foam/air sauces? I am about to go get supplies and start experimenting and thought it may be best to get advice BEFORE I do anything...

I already have a couple unique ideas but would appreciate any additions.

It was fad on the West Coast about 6 years ago. It lasted about as long as Ryan Sims could finish off a hot dog.

Not the way I am using it... I will discuss it once I have made my first successful foray.

This sounds like a twist on ice cream and omelets.

Straight ice cream is a rock when frozen (it's whipped with air to reduce density by 50%) . You'd bust every utensil trying to get it out of the container if air wasn't added.

An old trick for really light omelets is to whip the eggs in a malt mixer. The mixer incorporates tons of air to achieve the lightness. The technique works with blenders, too, but not as well.

I've seen guys use them on the food network in different competitive settings. The judges are rarely impressed. It seems they are usually fruit based, but I think they can go the savory route also.
