I would add Buzkashi, the national sport of Afghanistan. The term "Buzkashi" means "goat-grabbing", which you can probably see why it has earned such a name:

I would consider adding skateboarding if it was a downhill race and the contestants could hit each other with large jousting sticks. Otherwise, no.

Why not take out Karate and just do what we all wanna see and put MMA in there instead?

Most sports are fun to do and boring to watch. Skateboarding and those snowboard half-pipe things take that rule to the extreme. Those are actually less interesting to watch than golf, and I never thought any sport would be less interesting to watch than golf.
