So which of the movies that I haven't seen would you recommend the most?

Snatch, Taxi Driver, City of God, and Das Boot are the ones that are the most intriguing to me.

I've intentionally avoided Silence of the Lambs and Aliens due to them being too intense.

I would add these three to the list.

A Clockwork Orange
American History X
Once upon a time in the West
12 Angry Men

Here are the ones I'd most recommend, but there are a few in the list that I also haven't viewed. This is kinda ranked highest first, ignoring Silence of the Lambs and American History X.

Alien is fantastic, you really have to see it.
A Clockwork Orange is great. I've watched it several times and still pick up new stuff.
Snatch is fun.
Taxi Driver is great, I really like the soundtrack too.
City of God, very good.
Eternal Sunshine of the Spotless Mind is a good one.
Oldboy is great the first time.

To me, that was a perfect love story. I don't like love stories. I avoid them. I watched that with my 15 year old son and we both enjoyed it. It's that good.

You're right, it really is good. I don't know of anyone who's seen it and not liked it, including my brainless action-flick friends.

Those are great, especially City of God. That's really more intense than Aliens or Lambs in my opinion, though. I've always thought Silence of the Lambs was overrated.
I really like the Apartment. It might not be everyone's taste, though.

Although dated with a very 80's look I thought the original Hannibal Lecktor played by Brian Cox in the movie Manhunter was way better as was William Peterson as Will Graham and Tom Noonan as The Tooth Fairy.

If you've seen Manhunter, there's absolutely zero doubt where Anthony Hopkins got his inspiration for how he'd portray Hannibal.

These are the ones I'd strongly recommend based on the ones you have not seen (note, I did NOT take into account what might be too intense):

20. Seven Samurai (1954) X
25. The Silence of the Lambs (1991) X
49. Alien (1979) X
57. Cinema Paradiso (1988) X
59. Paths of Glory (1957) X
64. Aliens (1986) X
68. M (1931) X
69. Taxi Driver (1976) X
72. A Clockwork Orange (1971) X
74. Oldboy (2003) X
82. Eternal Sunshine of the Spotless Mind (2004) X
84. 12 Years a Slave (2013) X
94. Rashomon (1950) X
95. The Third Man (1949) X
97. The Apartment (1960) X

I would put City Of God into the intense category even more so than the others because it's based on a true story.

As for the Star Wars discussion I saw the first one on its original release in the 70's when I was in high school and swore I'd never see another and haven't.

Taxi Driver (Scorcese's best IMO), the Miyazaki films on that list (Spirited Away and Princess Mononoke are both incredible), A Clockwork Orange (so unique, Kubrick in the prime of his career...though, a warning, it is more intense than Silence of the Lambs and Aliens), Oldboy (definitely watch it over Spike Lee's remake, it's another one heavy on violence, though).
