We limit their intake.
Initially, they dump their candy on the floor, and my wife and I laugh as we watch their eyes get to the size of saucers. Then we let them eat a little bit of it, and dish out the rest of it a little at a time over the next month. They eventually forget about it and we throw a bunch of it away.

My brother and I would dump each of ours out and then become "Candy GM's" trying to work trades out to get our favorite candy from each other. We'd even trade candy we'd never tried before as a conditional pick based on how it ended up tasting. Future Halloween trades were allowed.
