making Shish Kebabs for easter... advice?

ok, here is the plan...

Take a few lbs of top sirloin cut into cubes and marinated in a garlic-mint-yoghurt sauce overnight... make skewers of sirloin and also make skewers of various veggies

Grill.

Serve with pita bread(people can mix match veggies/meat as they please) and 3 possible sauces
White Sauce- garlic-cucumber yoghurt sauce
Red Sauce- Chili sauce with a touch of garlic and tomato
Orange Sauce- garlic, red pepper, paprika, tomato, almonds, bread, red wine vingar & olive oil pureed


OK, now here is where I need advice... is top sirloin my best bet for the meat?

What are the best veggies to use? I am thinking now of onion, tomato, various bell peppers, various mild to medium peppers (Anaheim to Jalapeno), zuchinni, mushrooms... anything missing?

Any advice helps...

Also, is 2lbs meat per ever 6 people a decent guide? remeber there will be veggies and other fillers

Should I make it 2lbs per every 4? 5?

Good choice of meat.

When I do it I keep soft veggies and mushrooms on their own skewers away from things like pepper or onions because they burn so easy.

Yup, I think each type of veggie will have it's own skewer, then just dume the results onto plates for easy pita makin.

Depends on the eaters but you might want to throw in a cubed chicken breast piece every once in a while with the meat.

Think in terms of one pita full of meat and veggies as a serving... how many lbs of meat per # of people is a good guide? (heading to store in a few minutes)

I'd still throw an occasional pepper/onion slice into the meat skewers just for flavor. Peppers especially can take some heat.

good idea, I have a few lbs of that on hand so may as well use it.

I am expecting anywhere from 10-30 people (it's at my buddy's bar... having an easter egg hunt for the big "kids" as well) but at least 4 or 5 are vegetarians

If you go half a pound per person you'll be fine. That's like a half pound burger plus veggies if you think about it.

If you're going to go so heavy on the yogurt/pita/greek thing, grill up a few big ass olives.

Chicken grilled next to beef is awesome....especially if you're marinating it.

I think you'll find that your 2 lbs/6 people will be more than enough if you're going the pita route.

ok, I have 3 lbs chicken and 1.5 lb pork that I will be cooking as well I think (since I have it here already)
