I thought I would redo an old classic. What are you having or did you have for dinner?

Made a badass saffron chickpea soup with almonds that I prepped over the weekend (precooked the garbanzos, made the vegetable stock).

The real highlight, though, was that my wife and I are trying to add more meat to our kids' diets. As such, I'm a total meat newbie. I had some chicken breasts. I had some fresh basil. I said, might as well try basil chicken (sort of thai style).

Shit was awesome. Took the breasts and salted and peppered them. Heated olive oil in the pan. Seared both sides and let cook. Sprinkled on a little garlic powder. Just before the breasts were finished, I deglazed the pan with white wine and threw on the fresh basil. Let the wine cook off. Shit was off the hook.

Homemade mexican chicken pizza.

Except halfway through prep, I realized I was out of flour and had no taco sauce or seasoning.

Had to improvise with bisquick and chopped tomato and chili powder. Ok, but not the greatest.

Luckily we have a local natural food store within walking distance of our house, so we can pick up quick items that we need there.

Crust tasted like biscuits, which I didn't mind, I just missed on the sauce.
