Guys like Wisniewski and Pouncey struggled at the position when they played it and Wis was actually moved back to guard after being at the center spot his junior year.

There is a lot of high quality true centers out there, and a number who should excel in a zone system. Kirkpatrick, Baxter, Barnes, Taylor, Linnenkohl, Bartholomew are all solid pivots that would work well in this blocking scheme.

However, I think that Hudson is a very special talent and possesses skills that bely his "average" size. He's dominant as a blocker and really drives even the biggest defenders around with ease. He has played some center (as well as tackle) for the Seminoles and would absolutely excel in a zone scheme.

If he's there is the second, it would be a completely solid pick. Sherrod in the first and Hudson in the second would indeed solidify the offensive line for a decade.

LG: Albert
C: Hudson

(Make Ryan Harris your #1 free agent priority and you've potentially got one of the best lines in football.)
I guess if you are moving Albert into the LG position, you could go ahead and grab Franklin in the 3rd. I have read where several GM's think he has more athleticism and long term potential than Castanzo and Carimi.
