You're right about the difficulties of maneuvering in space but it's not impossible, just takes thrust and overcoming inertial problems with occupants and the movement of the spacecraft in question.
And the "thrust" as we are able to do it now requires ejecting mass at very high speeds, and the mass of what is ejected relates to the mass of the total entity. In other words, if you have to "turn" a lot, it requires your ship to be mostly fuel to do it...

and the "turn or stop on a dime" at 0.1c... get real... it would crush everything inside the ship... and the ship...

It's pointless to think of space travel in terms of the propulsion methods and flight characteristics of Earth bound craft. That includes the crafts we've briefly sent into space so far. You're limiting your options to outdated technology that wouldn't ever be used for deep space exploration.

Think of the human race a mere 200 years ago. How many would have argued fervently that it would be impossible to ever travel to the moon?
