Well if you can de-bayer the color it should be possible to bayer the color to get it close. Work backwards from extracting the Luminescence.

That was my first thought...and it still could true it is just that...there are so many ways the same image can be black and white after adjusting contrast...tones...highlights...a whole slew of things.

So my next thought is it prob can't be reversed that easy because you don't know if a recipricol process is a 1:1 match. However there is enough information to do what they did if you are really ****ing good and a bit artistic.
