I won a chili cookoff with friends the other day with chopped smoked beef, chipotle, one can of black beans, and some canned tomatoes. Onions, celery, and all that, but really the flavor came from the smoked beef, bacon, and chipotle I think.

One thing I haven't seen mentioned is IMO chili is better the second day.

I try to cook mine the day before we're going to serve it. Then chill it over night in the fridge. It just be my imaginagion but I think the change of temperature infuses the flavor.

That's true of nearly any tomato based product. Lasagna, basil soup, chili, etc.

I like to have a tamale/chili spread at Dixon's Chili every once in awhile. If you've never been there, Dixon's is very close to Arrowhead, just a little north at US 40 Highway and Blue Ridge Cutoff.

There's this stuff at McGonigle's called Champion Select Chili Fixins that is pretty amazing. Great in a pinch if you like quality/unique flavor.

I know some 'true' chili has no beans, but without atleast a few, what the hell is there to fill you up?

Meat, veggies & liquid just isnt the hearty gut sticker i expect from chili.

I was sitting watching a Chili cookoff on Saturday it was a free for all. Before I left I checked out what was in coming to be judged. 2 were white Chili and 4 was red chili. All 6 of them looked like it came out of a jar or can I was not impressed. It is hard to find anything with any heat around here.

For my my chili is usually different every time I make. The only constant is it goes into the crock pot over night. Ingredients vary depending on what the produce looks like at the time and what I have to make on hand. I like it hot enough that when you finish the bowl you have to wipe your fore head after you are done.
