I think it was spicier in Louisiana, but that could be because I'm older and now very accustomed to Cajun seasoning.

Back in my charter pilot days, through all my flying in the Louisiana, Arkansas, Mississippi, Alabama, Florida, eastern Texas, many of meals in small hole in the wall restaurants, and meals made by true blood "Coon-Asses", I have never ran into rice and beans that made me think "HOLY SHIT".
I did have some iron bowl crawdads and rice that some coon-asses in our Talledega camping group made that was good, though. I've had plenty of experience, but my pallet doesn't respond to it like yours. No biggie, we are all made different. |
