I LOVE Bleu cheese but not on turkey, but on a burger, a steak or a salad. It's too strong on poultry products.

I think that a lot of it has to do with these places trying to add flavor to their otherwise bland burgers. A good burger should only really need cheese.

The idea of egg on a burger just seems disgusting to me as does andouille sausage. But then, I don't like andouille sausage either. Still the idea of mixing sausage and beef? I dunno. I want to have the hamburger beef because of how that tastes not completing meats in a burger.

I also don't care for grilled onions on burger but do like raw white onion on it with ketchup, yellow mustard and dill relish or pickles.

I make turkey burgers from ground turkey all the time. I've found that adding minced onion and Worcestershire to the raw turkey is essential for flavor and keeps them from drying out on the grill. While they're grilling I'll add some burger seasoning.

Bakers Square (local chain similar to Perkins) has a chicken avocado melt sandwich that I really like. Chicken, avocado, swiss cheese and sour cream on toast of your choice (I prefer sourdough). Delicious.

I've been using avocado under my scrambled eggs with holindaise on an English muffin. Good stuff.

Yeah, I do that with Huevos Ranchero's, too.

I just found a "Southwestern Deviled Egg" recipe in which avocado is substituted for mustard, with a jalapeņo slice on top.
