Because they work even though they look ugly, and it's not worth spending as much time as it would take to introduce a new set for 2-3 plays a game. Also, it doesn't make sense to have players line up from an unfamiliar formation when the plays matter most.

Well considering that the University pretty much owns KOMU and pretty much "owns" or "controls" most of Columbia you won't see anyone be critical for fear of being ostracized.
