-- Please display ideas regarding the Jalapeno Pepper

I thought there should be a little something on this delicious snack/ingredient w/ a zing.

What do you all used them for - stuff them? dice and top stuff?

Interesting when deep fried - or - cooked period; how they'll lose their pungency , yet carry a nice green pepper-esque flavor.

Where and how do you use these toward your recipes?

Have you had ground jalapeno powder (spice) - what do you use it in?

I like the bacon and cream cheese combo w/ the jalapeno pepper.

What about snacks, chips or crackers or whatever that's jalapeno flavored??

Jelly Bellys....?

Anyone ever add to a juice (like from a juicer 'juice'?)

I appreciate any new, fresh ideas w/ these bad boys.

Thanks

Very, very nice.

I'm guessing on some of these amounts.... I saw this on TV, but they didn't give any amounts. This is a good start.

1 clove garlic, minced
3 turns olive oil
2-4 scallions, sliced
1 jalapeno, seeded or not, sliced thin (red or green, I like red for color)
1/2 pt. of grape or cherry tomatoes, halved
1/2 lb. shrimp
6 fresh basil leaves, chiffonade
Angel hair pasta
White wine (couple splashes)
salt/pepper to season
Lemon

Boil salted water for pasta.

Heat oil over medium high heat. Saute garlic, scallions, and chile. If you like your tomatoes firmer, wait to add them. If you like them cooked down a little, add them now. Saute about 3 minutes.

Drop the pasta in the water.

Add shrimp and wine (and tomatoes if you want the firmer texture) and saute for 3 minutes.

Drain pasta, add to pan and toss with shrimp/sauce mixture. Top with chiffonade of basil and a good squeeze of lemon.

Jalapeno Corn bread

We do this in a bread machine and pour into pan.

1/2 cup water
1 tblsp butter
1 1/3 cup bead flour
1/2 cup cornmeal
1 tsp salt
1 tblsp white sugar
3/4 cup whole kernel corn drained
2-3 big tablespoons chopped jalapeno ( recipe calls for 1 tablespoon)
bake 350 till the toothpick comes out clean. You know the routine.

I use them all the time. I regularly make black beans with onion, garlic, and jalapeņo. I throw them in omelets or make salsa or on a sub. Two nights ago I used them in a marinade for salmon. I've even just lightly fried them in oil and topped with sea salt.
