Thanks everyone for the feedback, I guess there is no substitute for just trial and error--using a cheap piece of meat as my guinea pig so to speak. I've used only BGE lump charcoal and will do so until I get more familiar with it. Haven't been using it a ton because of bad air days in our area, but hope to get it fired up in the spring.

I just wanted to pass on a pleasant experience on lump charcoal and give a heads up.
Wallyworld has recently had this "special buy" 30 lb. bags of "Cowboy charcoal" and it is amazing. I have now done 4 all day smokes, pork butt, pork shoulder twice and brisket off of the same bag and it is not empty yet. I paid $10 for the first bag and went back yesterday to see if they have anymore. It was marked down to 7.99 so I got 5 more. I think they want to move it out. |

Yeah its time to start checking Walmarts on the brickseek inventory checker for grill deals.
I was at lowes last night and came home with the Camp Chef gas 24in Smoke Vault for 60 bucks. They were out of in box but I got the floor model. Its in the yard shed till after gardening season. If my wife finds out I bought another smoker Ill be catrated and remains thrown to the racoons that come through backyard every evening.

The Butt or Boston Butt is the upper front shoulder That is more fatty and marbled and the picnic is the lower part of shoulder and less fatty. I guess the only reason it was called a butt is the barrels they used to be stored in were called butts.

Two words that changed my briskets...and I've been smoking for a long time.
peach paper. I did three briskets for company party last week and the results were amazing. Perfect bark, tender and moist meat. http://www.thesmokerking.com/butcher...l#.W1pzDtJKiW- |

pink, peach, butcher.....it allows vapor to slowly escape...compared to aluminum foil. My bark was thick and crunchy. |
