I read an article on The Kitchn about tips a maître d learned by working in a 3-star restaurant, and it made me think about a comment Inmem58 made in the What's for Dinner thread.

10 seconds. I do this all the time. Works great, but the cloves are sticky I rinse them after. This technique is a lot better than smashing.

I don't do that. Mine is still red/orange. I buy in bulk in small quantities to keep fresh though. Maybe that's it.

If you don't have a passion or even a general fondness for cooking you will never be good at it. Your mind will not be receptive to all the wonderful information and inspiration available in so many ways. If cooking is seen as merely a chore rather than an opportunity to have some fun on a regular basis then I hope that you find some outlet where you can enjoy the simple things of life.
