I read an article on The Kitchn about tips a maître d learned by working in a 3-star restaurant, and it made me think about a comment Inmem58 made in the What's for Dinner thread.

My piece of advice is simply to taste and adjust your food before you serve it. After you taste it, you'll know if it needs seasoning - salt, sweet, sour, bitter.

Learn to !@#$ing cut.

Cooking is a hell of a lot less onerous if you just learn how to use a basic chef's knife. Always keep the tip of the knife on the cutting surface and 'rock' the knife as you feed food through it. Ideally you curl the fingertips on the 'feed' hand back under at the first knuckle; it will keep you from taking the tip of your finger off if you're not paying attention.

Also, don't be scared of heat. Like really comically high heat. It's not always needed but there are times when it's just irreplaceable. Sometimes its something as silly as re-heating leftover fajitas (jesus, why would you ever do that in a microwave?). Other times it's trying to get an onion to caramelize or something. If you watch what you're cooking and keep it moving, high heat can be a very good thing.

The best two tips I always give a new cook is to never become discouraged or intimated. My wife use to get like that when we first started dating. She noticed the way I cooked and she felt compared.

I have helped her over the years and now she's not afraid to take on some of the most difficult dishes.

From this board in particular, I learned that letting a steak get to room temp is the way to go. I also have a new passion for skillet cooking such as searing. Salting a steak 24-48 hours is something I ALWAYS do that I haven't done before. I want to take my cooking to the next level. Exploring different cultures and how they prepare their meals. I learned that not all different cutural cuisines are difficult. This board gave me a lot of encouragement to explore other things.

You've described only one type of cut. That doesn't do it all.

I love my Thermapen. I have two now, since one is on the fritz. And seriously, their customer service is great. They responded through Twitter to me once on a comment I made about how much I loved my Thermapen, but was going to have to figure something out because the battery cap broke and was way out of warranty. They contacted me about which of my two had the broken cap, I told them the red one, they sent me a red and blue "just in case."
