I disagree. The brisket I did a month ago (or so) was only 7 pounds. Mine wasn't dry.

Oh, but one thing I have trouble with around here is finding one that's not super lean. If Inmem's was really well trimmed, that could be a problem. I have held out for ones that have a decent amount of fat on the cap still.

I bought it from Costco, they have good quality beef. I didn't trim much at all. After I sliced it, it just completely dried up, very fast. It had the look and texture of jerky on the outsides. I wrapped mine in foil around 170 and cooked until 190ish. Not sure what happened.

Test you thermometer in a pan of water see what it reads at boil 212 is when water boils. If the thermometer cant be calibrated make note of the difference and adjust.

Also never trust your thermometer on a grill or smoker they are notoriously wrong always pop them out regularly and do a boil test then compensate. They set outside in all sorts elements and covered so condensation gets inside. Also what did you smoke in? I know a lot of people try to smoke on a weber kettle and have good results but brisket is another beast and gets a little to close to the coals have to indirect and watch temp like a hawk. Sometimes you just get an old cow I have got a bad cut and costco and Sams.

Out of the box, Thermapens are on the money. They can also be calibrated if they go out of calibration.

Every one I've owned has been nails out of the box. I've had three traditional Thermapens, one Chef Alarm, and one Dot.

Guess I got a bad one. It's not really a big deal but I have learned over the years with high precision survey equipment everything needs to be calibrated.
Out of the box means zeroed at the elevation of Sea level. Boiling points if I remember differ by altitude.

I have both of these, and they do a great job. The good news is that the top one has all but confirmed that the smoker thermometer I installed is pretty-much right on. I wish the lower one was faster in reading the temp, but I'm not complaining.
