My smoked then dried and burr ground Ghost Peppers will clear some space in the kitchen just by opening the jar. What a chef would call a pinch added to 8 servings of chili will increase beer drinking dramatically, perspiration levels too
I had a Mexican Beertender who said nothing is too hot, I gave her a damp finger dab of my Chocolate Habanaro seasoning and she put it on the middle of her tongue and handled it like a camper. You could tell it got to her but she handled it well. When I told her I was being nice and had given her the mild version, she smelled the Ghost Pepper version but refused to taste, saying "Nope, no ****ing way." Her other job was at a BBQ joint (not bad stuff for IN) and I had given her boss a sample and he had already stolen my thunder. She said it tore her up. I have thought about cooking some into a sauce but can't find any volunteers. I wore a paint respirator in the garage to grind it. I still have 2 coffee containers full that need to be ground and there's no hurry.

Juan's store is OK but check out my other post, the Figuero's had 3K different hot sauces including all 60 of the hottest.

For store bought I like Malinda's black label.
The past couple years I've fermented red savina, ghost, orange habanero, Serrano, and reaper chilis. The fermentation process cuts the heat and brings out the the flavor and aroma without the burn. This year I picked up a pack of 7 pot seeds and have 9 plants in trays. At some point I'll play with blending some peppers but that'll be down the road.

I live in Louisiana and can't stand Tabasco. It is too vinegary. I love Red Hot - it has the right balance for everyday use. The Dave’s Ultimate Insanity Hot Sauce is the shit! The first time I tried it was a splash in a gumbo. It was so hot I tossed it out. Funny thing is, after I got used to it I could cover the top of an omelet from Ihop with it like jelly on toast!

I put Louisiana Hot sauce on damn near everything. Hell, I pour it into a tablespoon and eat it by itself. The vinegar and cayenne together are super addictive to me. Second on that list for me is Sriracha. I put that on quite a bit too. It's great on any asian inspired dish, in chili, on a hot dog, etc. Damn, now I'm hungry
