I marinade venison for three days in the following and it makes a nice sweet and hot jerkey.
2 cups soy sauce 2 cups orange juice 1 cup apple cider vinegar 3 cups brown sugar 1 full bottle (6oz) liquid smoke 1/4 cup red chili flakes put it in a sauce pan and cook it to melt the brown sugar. Place it in the fridge for a few hours to cool. then pour over the meat in gallon bags and marinade for three days. Dry in oven or dehydrator. |

First time trying to make jerky. The dehydrator booklet says it will take anywhere from 4-12 hours. Mine has been on almost 4 hours and it's starting to look like jerky. Is there some method to use to know if it is done?
