Ah, next time wrap it in foil when the color is where you want it. And yes, too much smoke will make it taste bitter. I usually stop adding smoke after about 2 hours

You know what. I thought about both of those things, because I do both of those when smoking other things. Problem is, I followed an online guide for this turkey because it was my first. I wondered why they didn't mention either of those things, but went on with their instructions anyways since I figured they knew what they were doing. Next time I'll trust my instincts. Not sure whether to chalk that up to inexperience or lack of confidence, but lesson learned either way. Thanks for the advice.

I know it's early, but I gotta get menu planning. One of my wife's favorite holidays is Thanksgiving (she's part Hobbit, so she digs the food), and her birthday is two days later. She's informed me she doesn't give a crap what else is on the menu, as long as there's mashed potatoes and stuffing.

So I've got those covered - every year, though, I tend to tweak the stuffing. Last year was best yet. ****, I have to remember what I did.
