I mean Curry as in FOOD. I have a bitchin recipe that I am willing to share with anyone who likes Indian food. Call it C4E's Chicken Curry........

OK. First caveat....it takes time to make good curry. If you like lightly spicy food, it is worth the wait.

Second caveat...don't be cheap when it concerns your stomach. A good meal is worth the expense.

Ingredients:

1 LB Chicken Breast (boneless and skinless)
1/2 can coconut milk
1 onion
2 cloves garlic
1" of ginger (fresh)
1 tbsp Sambal Oelek (hot Chili Paste) or 2 finely chopped fresh Jalapenos.
1 tbsp Chili Powder
1 tbsp light corn syrup
1 tbsp Indian Curry Powder
2 tbsp Olive oil
1 cup mixed broccoli and cauliflower (frozen)

Preparation:

Evenly chop onion, garlic and ginger. A blender or food processor is best. Put into a pan with 2 tbsp olive oil and simmer slowly until the onion is soft but not brown. TIP: Good curry is cooked SLOW. Take your time. Cook the onion mixture for 45 minutes or so on the lowest heat. Add curry powder, chili powder and chili paste. Allow to simmer until the spices are well worked into the mixture. Add chicken cubes. SLOWLY cook until the chicken is no longer pink and is coated with the onion mixture. This will take about 40 minutes. Add veggies, coconut milk and corn syrup. Simmer 20 more minutes.

Server over Brown Rice or Rice Noodles.

Enjoy.

I may give it a shot. My wife won't like it but it's worth trying at least once.

I'll do it.... I was gonna search for a potato & tofu curry recipie when I saw your post. Looks spicy enough that it won't be able to tell the difference between tofu & chicken. Its wuts for dinner!
