[Fire Me Boy!]

What's on your Christmas menu this year?

It's just the Mrs. and I this year - no kids, closest family is 11 hours away or more, so we'll be spending the day with our friends at the local AMC. But we are cooking dinner.

I'm going non-traditional this year and doing a spin on my super secret lasagna. This year it's a fresh pasta lasagna with a homemade ragu and bechamel with Italian garlic bread. The wife is doing a vanilla bean crème brûlée for dessert.

We spent 45 minutes today waiting in a meat market to make our order.


Christmas Day-not sure yet. Depends on what we do.

We've started the prepwork. Pies are being made, items that won't be ruined by early prep are being sliced. Tables and chairs are being put in place, platters are being taken out and re-washed to make sure they're clean, and so on. Being in for the night, I'll probably check here a fair amount, but just in case:

Brown and serve rolls

Menu is really what I have on hand, that being said, anyone have any good oven roasted brisket recipes?

my wife got me a new smoker for Christmas, so I smoked my first ribeye roast.

I did steaks on the grill, the rest was handled by others and all those other dishes either started in a box or was frozen in a bag... So I ate the steak and just a touch of the other things.

The boss sent a Harry & David assortment that had chocolate covered cherries. I put a hurtin on that bag of joy after dinner....

The lasagna turned out pretty outstanding. Since I was doing fresh pasta, I used a recipe base from Mario Batali for the ragu and bechamel, which turned out good, but not saucy enough. In any case, learned some good lessons that will ultimately improve my secret lasagna recipe.

my wife has made fully canned, from scratch, and fresh beans with canned soup. The last was the best.

Oh, mine definitely didn't taste out of a box.

The wife's creme brulee was also pretty damn good. The two big ramekins were a little underdone, and it could have used a little more punchy vanilla flavor, but good nonetheless, especially for a first tiem.

I prefer it with frozen beans. But the key is to spruce it up. Sauteeing some fresh mushrooms and onions and seasoning with a little garlic salt and pepper is a super easy way to really amp up the flavor.
