Cook for 3-4 minutes as the sauce absorbs. Throw in some finely chopped napa cabbage (optional) during this phase as well. Add back in your meat and 2 cups bean sprouts and toss. Remove from heat and transfer to a serving bowl.

On top of the Pad Thai, put 3 tablespoons minced green onions, 3 tablespoons minced cilantro, 1 teaspoon crushed red pepper, and 1/3 cup chopped peanuts.

I often put additional cilantro and peanuts on my individual portion, and squeeze a lime wedge's worth of fresh lime juice on top.

A note on cooking the Pho noodles. Just put in quite warm water (not boiling) for several minutes until cooked al dente for you. They will soften even more when you put them in with the sauce for those four minutes.

Delicious, easy, and makes great cold left over lunches.

You joke, but Thai and Vietnamese take a back seat to Italian alone in St. Louis. The family that runs Thai Gai Yang on the Loop have [or used to have] 4 other restaurants on that block, each with a different aspect of Thai cuisine, casual, formal, French influenced, etc.
