MEATLOAF...what's in yers? [merica!]

Nothing screams 'Merica than some good OL fashion meatloaf...and that's what's on the menu at the Tomahawk household tonight.

But it got me thinking..everyone has their own spin on making meatloaf, what are some of your key ingredients?


I like to add bacon, sweet peppers, and extra honey mustard to mine.

I don't do the meatloaf pan, I go with a 9 x 13 baking dish to let the grease drain. In doing this, the top of the loaf tends to split and sometimes the loaf comes out dry. I like meatloaf but don't want all the grease cloggy my arteries. Anyone have a better solution?

1 lb ground pork
1 lb ground beef
1 sleeve of saltine crackers
1 cup plain yogurt
1 large cooked onion
some hot sauce
some worcestershire sauce
some dijon mustard
garlic

I form the loaf, then sauce it with a ketchup, vinegar, and brown sugar mix.
Then I layer bacon on the top and sauce it too.

Pretty damn good if you ask me.

As a rule you never order the meatloaf at a restaurant unless you know it is good.

Here are some options you may not have tried

Use lower fat beef in the loaf pans
Try using mixed meats (beef/pork/veal)
Use egg as a binder
Use some chicken broth
Use some finely chopped mushrooms (if you started with dried mushrooms, you could add some of the mushroom juice to the mixture
Use fresh bread cubes instead of store bought bread crumbs

I'm not a meatloaf fan, but this is good advice. Find some dried porcinis, they're super high in glutamates, which will boost the meatiness of the dish. Get some dried porcinis, cover with plastic wrap, put them in a little water for about 5 minutes in the microwave, and let steep for 10-15 minutes. Chop 'em up finely and add them to the meatloaf. Reserve the mushroom water for something else.

My dad makes a great meat loaf. I don't know what he puts in it but it's fantastic. Two things he makes great: meat loaf and steak. That's really it though.
