Chuck roast was the only other choice on the 4th since the store was for some reason fixated on steaks and hamburgers. I opted for the bottom round because it looked like the chuck was going to require a lot of trimming. Bad choice on my part. But my wife would have freaked out with all the marbling. She was thinking the bottom round looked fatty.

My supermarket just labels their package "stew beef"—even at Costco when I buy it in bulk. Could be chuck or round I guess,
Maybe it's just what their butcher decides to cut-up that day. (unless it's an expensive cut) So long as it breaks down in slow cooking and comes out tender and tasty—I'm fine with it. That's what cheaper cuts with more collagen are good for right? |

Hebrew Nationals or Nathan's for me - Their mustard brand is quite good as well. Lots of heat. I MUST only ingest the smaller gauge hot-dog - I've said it many times on here before, anything above the smallest gauge is too much mystery in my mouth, per bite. I can't start to get grossed out w/ the hot-dog; or I'd never finish it and it'd end up trashed.

Mustard and relish or Sauerkraut, for me—never ketchup or chili. Something about tomato flavor on a dog for me isn't appealing. And NO cheese either.

I made strip steak topped with sauteed mushrooms, baked potato, garlicky green beans and a great salad.
I did meat in cast iron and completely forgot about using the salt method until I was ready to cook it. Damn! I did get the pan real hot and got a real good sear. Salad was made up as green leaf lettuce, spinach, cukes, chopped purple onions, tomatoes, diced avocado, chopped red pepper, black olives and the following fresh herbs: chopped chives, mint, basil, oregano and dill. Mixed Four Season's dressing using virgin olive oil and red wine vinegar. Freshly milled black pepper on top. That's what I made but not what I ate--at least the meat. I had my own salad with a different dressing as mentioned in the other thread. |
