What's for dinner? Here's mine...

A black bean and chorizo soup with focaccia to dip. Lots of great ingredients in the soup and a fresh-baked focaccia to slice and dip. The chorizo is soy and really spicy.

Throw some onions and peppers in there if you like as well, or skip Cavenders and use blackened/Cajun spice mix instead.

Perfect on the grill!! Absolutely perfect. Get it good and charred, then sprinkle a little feta on at the end and let it brown a bit.

I make probably 20-25 batches a summer.

If your grill grate is too wide between spokes, make an aluminum foil tray by folding the sides up to make a lip around the edges and poke some holes in the bottom so the olive oil can seep through and flare up to char.

I did this for years.

Luckily 4-5 years ago, I found a great deal on this;

That'll work, just be prepared, squash and zucchini will soak that olive oil up and the grill will saute it 'till it's like buttah. It's great in that it absorbs the oil, spice and smoke so well, but you'll be using a fork to scrape it onto the plate. With that much spacing, I'd char the veggies then if you want the feta put the plated cooked veggies under a broiler for a few minutes instead of trying to brown the feta in the back yard.

I see, I may just do the foil thing. I could line the basket with foil and make sure the holes are large enough for the flames to kiss the veggies, but small enough to hold the bulk of the cheese.

Eggplant is an option as well

Just remember, the thinner you slice it, the closer the grill grid needs to be. If you just slice eggplants, zucchini and squach into quarters lengthwise, a standard grill might suffice, any thinner and go with foil or a grill pan like Williams Sonoma.
