Does anyone have a nice poached salmon recipe to share?

<h4>Poached salmon</h4>

This is an elegant dish. Perfect for holiday brunches.

1 5 to 6 pound salmon (have fish monger remove head if you are squeamish)
water
2 cups white wine
1 medium onion - sliced
3 carrots - cut in chunks
3 celery stalks
2 tbsp. salt
1 teaspoon pepper
1/4 cup minced parsley
2 tbsp. dill

Place salmon in poaching pot. Cover with water until almost submerged. Add wine and remaining ingredients. Bring to a boil, reduce heat and then let gently simmer - 30-40 minutes.

If you do not have a poacher, use a large pot. Place the fish in a semi circle in the pot and proceed with other directions for poaching.

Remove from pot. Place on platter. Refrigerate. Next day, gently remove skin. Garnish with dark salad greens, parsley, lemon wedges. <BR>
