Oven roasted, but it's brined... from now on anyway. I brined a turkey over the weekend to test it out and it's amazing!

I brined mine, but nstead of the vegitable broth, I use onion soup packets, and some secret seasonings. I have done well over 20 turkeys this way, and it is by far the best turkey I have ever tasted! :) |
They're doing a few... but the one I grub on will be fried. MMmmmMmmmmMMMmmmm

First I debone the turkey except the wing and lower legs. Then I slow cook it with wine basting into the cornbread stuffing in the slow charcoal cooker.

I don't think they really prepare them much for what we are about to do, probably just tell them that they won a new retirement home in the tropics.

I cut him in fourths and put the rubbin' on him tonite, and will smoke his parts tomorrow on the Weber, over an oblong cake pan with water in it, with coals on both sides of the width of the pan.
|
I make a marinade of Worcestershire sauce and a nice brown ale (Samuel Adams is always a good choice...) and season the turkey with sea salt, coarse black pepper, oregano, and garlic powder, then into the oven it goes. Then I can make a very flavorful gravy from the juice for the mashed 'taters.
