Ham hock n Beans

How ya like em? What beans you use? Spices? Add-ons/ins? Stove or Crock pot them?

I recently made some HH&B and man there is something so comforting about that meal. I made mine with 2 ham hocks, 1lb of great northern beans some water and let them cook all damn day in the crock pot.

I also like to add fresh chopped onion prior to eating. Sometimes I also add some ketchup. Oh and gotta have some cornbread.

So how do the denizens of the planet go about making/eating this dish?

Made a mess of beans Tuesday. My (so called) recipe is nothing near fancy. Just clean a pound of pintos (pick through for nasties and rocks) and throw them in the crock, add a hock or two. If I can’t get hocks I’ll add a bit of salt pork. Fill the pot up with cold water and turn on. Check on them once in a while to make sure they haven’t soaked up all the water, and if they have, well put some more in the pot.
When the beans are done get your cast iron and put it in the oven. Turn on oven. Make the cornbread recipe off the back of the clabber girl can. When the skillet is hot put some bacon grease in the bottom and let it melt, pour the cornbread mix in and put the skillet in the oven till golden brown.
Now you are ready for the taters and cabbage. Wash taters and slice. Fry up in a little bacon grease till “soft fried”
Dice up your head of cabbage and put in a pot, add a just a touch of water and put the lid on it. When the cabbage is just tender and the water is evaporated, it’s done.
Now dish yourself up a bit of beans, slice of cornbread, spoonful of cabbage and some soft fried taters. Grab a glass of tea and a slice of onion. When it is asked, “what’s for supper” in my house and I reply “beans” this is the meal everybody knows will be on the table.
