Casseroles?

OK, folks. Looking for some casserole type dishes that aren’t in my repertoire. Post up your favorites.

I do this sort of Mexican lasagna type casserole with some small differences. I tend to use enchilada sauce and no tortilla strips. Sometimes some Jalapenos or diced chiles in there.

What do you use to separate the layers? And I do like a cheeseburger-y casserole in the cold weather.

I didn't read completely and thought you meant those crispy fried strips on top. I use small tortillas for the layers that'd be pasta normally

Oh, OK. It's pretty much the same thing but cutting them into strips seems to work really well.

This is the snack I typically sneak into the movie theatre but it's so delicious it rarely lasts past the previews. I'm not normally one to eat out of a ziplock bag but it's the only way to keep my pockets clean.
