Lots of good options here, but I'll go with I-15 and the A3.
I-90 is very interesting, but three weeks of driving is a lot. I-5 is interesting, but I-5 through the LA metro area would not be fun. A1 is interesting, but it's a lot of wilderness. In contrast, I-15 goes through some interesting places in Utah and California and Nevada, and I think it would be a relaxing drive. A3 has a mix of some populated places and wilderness, and it looks like I could visit a bit of Denali National Park.

A3 has been a choice of mine every round and is probably #1. Wife has a friend in Wasilla so we can visit for a couple of days and then check out Denali. Sounds great!
