Tell me more about this brine if you don't mind? I'm thinking of adding apple cider to my brine recipe this year.

2 quarts apple cider to 3 quarts water. 3 oranges, quartered. 4 oz ginger sliced thinly. 15 whole cloves. 6 Bay leaves. 6 garlic cloves, peeled and crushed. 3/4 cup Morton Kosher salt to 1 pound brown sugar.

EDIT: My bird is only 13.6 lbs.

Sounds nice, I like the citrus approach. Does that much brown sugar leave it sweet? Do you boil the salt down in the liquids?

Saw your edit, thanks. Yeah, I double everything.

I don't find it sweet and I'm not a fan of sweet. It's the best salt to sugar to liquid ratio for my taste. Yeah, I boil the cider with the salt/sugar for a minute, stirring to dissolve. If you boil, make sure you get that liquid down to 40 F before combining it with the water.

What are you brining that big boy in, a cooler? I got a 5 gallon food grade plastic bucket I use for brining, this turkey has it pushed to the limit with the brine. I like the visual of colossal turkey on the table.
