Filet can't do that. I honestly can't remember the last time I had steak at a restaurant. I find I can do an equal or better job than any but the high-end steakhouses, mostly due to available quality. |

Ribeye is my favorite cut, but filet and sirloin are more lean and I've been going to those cuts more often.
But ribeye, porterhouse and t-bone are the bomb in terms of the best flavor you can get out of a steak. |

I knew a guy who used to buy a chryovacked rib or strip roast, put it in a pan, and cut a slit in the top of the plastic, and let it age for up to a couple of weeks in the bottom of the fridge. Just cut off the green stuff.
