There are no specific instructions on how to do so in the link but it's evidently doable.

Yep, I went to Prime Video through Amazon.com, or wherever you watch Prime... and there was a Sports section, click on this week's game, and there's a button to record.

I assume you can start from the beginning and wouldn't have to wait until it's over, but if there's one league that would do something so stupid, it's probably the NFL.
