Thanks everyone for the feedback, I guess there is no substitute for just trial and error--using a cheap piece of meat as my guinea pig so to speak. I've used only BGE lump charcoal and will do so until I get more familiar with it. Haven't been using it a ton because of bad air days in our area, but hope to get it fired up in the spring.

I just wanted to pass on a pleasant experience on lump charcoal and give a heads up.

Wallyworld has recently had this "special buy" 30 lb. bags of "Cowboy charcoal" and it is amazing. I have now done 4 all day smokes, pork butt, pork shoulder twice and brisket off of the same bag and it is not empty yet.

I paid $10 for the first bag and went back yesterday to see if they have anymore. It was marked down to 7.99 so I got 5 more. I think they want to move it out.

The Butt or Boston Butt is the upper front shoulder That is more fatty and marbled and the picnic is the lower part of shoulder and less fatty. I guess the only reason it was called a butt is the barrels they used to be stored in were called butts.

peach paper.

I did three briskets for company party last week and the results were amazing.

Perfect bark, tender and moist meat.

I have a roll of that and honestly I use very seldom. It does help on beef ribs to tenderize it seems.
