Truthfully ? I smoke a huge ham butttttttt. If you really want turkey try this ..........
I smoke turkeys in a trader pellet grill upside down (breast down) fill cavity with sliced oranges and onions it tastes wonderful, I use head country seasoning on the outside after an olive oil rub. Keep a probe in it to monitor temp and let relax 30 min before carving, you will have the most moist breasts you can ever have and best flavor you ever stuck in yo mouth. |

We bought one of these five years ago. I had low expectations, considering how inexpensive it seemed, compared to other options.
It's truly amazing. I really have no idea how it works as well as it does. But the turkey comes out crisp on the outside, and totally juicy on the inside. And it doesn't take all that much time to prepare it, or to actually do the cooking. When we've had family over for Thanksgiving, I almost feel like I'm cheating. People go on and on about how it's the best turkey they ever had. And I've sort of gotten the reputation in our big, Mormon family as being something of a turkey whisperer. Just get one. You won't be sorry.

Smoking a turkey again this year, like I do every year. However; I'm pretty sure there was an injection recipe on here a few years ago that I cannot seem to find. The injection contained cream of chicken soup and a few other ingredients, heated up on a stove, then injected into the turkey (or chicken) prior to smoking.
Does this ring a bell to anyone on here?

nothing fancy, rub it with oil, inside and out and then put spices, herbs and onion in the inside of it. I tend to over cook these things because the thought of even slightly undercooked poultry makes me want to vomit.
