Carwin's face wasn't ripped to shreds because he tapped. Lesnar could have choked him unconscious and then beat him to death because Carwin wouldn't have been able to defend himself.

Carwin, on the other hand, was never able to put Lesnar in a position where Lesnar couldn't defend himself. That's why Lesnar was able to escape and win the fight.
