-- Beans - the past due thread.

Hi,

I'd like to know what beans you enjoy? How you make them? What side-items you include. Condiments atop their finished product.

Just go on and on for months about nothing but beans, here.

I love beans and they're super healthy, affordable and act as a virtual meat.

Anyone ever use ham base?

Anyhow - go on about your bean preferences!

Today I'm fixing Great Northerns and Pintos / Medley - Ham hock as well

We make a ham and bean soup whenever we have had a bone in ham. Throw the ham bone and leftover meat, some onion and a pound of soaked dried beans (I prefer black eyed peas) in the crock pot and let it cook on low all day.

Another bean heavy meal we make is a black bean and avocado enchilada. We make it more like a casserole, layering the shells and filling rather than rolling it up. We also add a little shredded cheese to the filling.

Another is red beans and rice. The recipe is vegan but we do add about a half pound of chopped andouille sausage for flavor. I also cheat and use the pressure cooker instead of cooking on the stove top for several hours.

I eat this 4 or 5 days a week, I call it 'dal' based on Indian curried pea dishes but it may not suit dal purists. Here's what I do - 1 lb of dried peas (picked over for pebbles, etc) I buy yellow split peas @ Hy-Vee because I like the appearance better but there's no diff. in taste if you use split green peas. Add 1 box (2 pouches) of dry onion soup mix - I use Aldi brand, it's cheap. Put this all in a crockpot, add about 8 cups boiling water/set the pot on hi & cover. First I add 1 TBL thyme, 1 tsp. cumin seed, 1 tsp. crushed red chile, 1 tsp garlic powder. 2 TBL olive oil. Crockpot on hi for 6 to 8 hours (or on 'medium' overnight) Now I add 1 can chopped green chile, 1 can 'ro-tel' tomatoes w/green chile, 1 can rinsed chickpeas or other canned beans, 1 can cooked spinach, 1 can chicken broth - 1/2 cup 'quick' barley. Stir well to blend and simmer for another 3 or 4 hours if you have time, or til hot enough to suit you if you're starving (give the barley time to cook).
I put 2 cup servings in glassware and carry to work, reheat and eat w/a shot of Rooster hotsauce. Lots of fiber, protein, flavor. Pretty cheap for the good you're getting.
1 cup = Calories 230 Sodium 580 mg
Total Fat 1 g Potassium 710 mg
Saturated 1 g Total Carbs 32 g
Polyunsaturated 0 g Dietary Fiber 12 g
Monounsaturated 0 g Sugars 0 g
Trans 0 g Protein 18 g
