I make a marinade of Worcestershire sauce and a nice brown ale (Samuel Adams is always a good choice...) and season the turkey with sea salt, coarse black pepper, oregano, and garlic powder, then into the oven it goes. Then I can make a very flavorful gravy from the juice for the mashed 'taters.
