Dallas doesn't need to convert a first down if they recover an onside kick. They'd already be in FG range after a recovery.

If Dallas was up 4 points, I'd agree with you. You can hold them to a FG and still keep it a one score game.

That philosophy fails with a 7 point lead.

The Giants did the right thing kicking it deep and giving themselves a chance. An onside kick isn't much of a chance.
