Planning on doing a brisket - but that motherfu*ker Gustav is messing with my weekend.

I have conference calls Sat, Sun and Mon - may have to actually go to the office on Mon depending on what this son of a biaatch does.

We are relocating employees from our Houston and NO area facilities to our Lakewood, CO office to keep our pipelines moving natural gas and gas/diesel.

It's mine. But Demon gave me the inspiration. The St. Joe connection was so damn strong in this thread, I had to throw down some posting goodness in this thread.

Can I ask how much the church raises smoking 270 racks of ribs?

Also......are they spare ribs or baby backs?

We are still collecting and delivering. Once everything is collected and our expenses are paid for, we should be close to $2,500. It's a pretty rough 2 days, but well worth it - this is the best fundraiser I have ever come accross. We have enough of a reputation for our ribs that they are fairly easy to sell, and we have the operation streamlined so the work goes pretty well. We could probably sell quite a few more, we have a good amount of help in the work, but I'm the only cook. And, by the time we are done on saturdays, everyone's pretty well worn out.

We cook pork spare ribs that run just over 4lbs each before cooking. We buy the higher quality ribs, they costs more, but our reputation is too important to take a chance. The bill for the ribs alone will run a little over $2k. We get $18 a slab, usually, we average a little less than half profit, but ribs were cheaper this time and we should just about double what we spent.

It's in the water. Our public water system dilutes the water with one part KC Masterpiece to every 1,000,000 parts Missouri River. That's why it's so sweet and delicious. Kind of like the best BBQ sauce for the finest dogs and brats you can ever care to BBQ up.
