They usually communicate through hand and body signals anyways. It's like that in all levels of football.

The coach usually communicates to the middle linebacker through hand signals and then he tells the defense the play. Atleast that is how it use to be before the defensive players got comms in their helmets also. However, I don't know how much the crowd noise would effect that or not. Im sure it would have a greater impact on the offense since their play calls have a lot more words to them.
