I am going to be cooking some turkey soon on a smoker that I just got handed down to me. Does anyone have any good recipe's for smoking turkey?

Turkey no. Ham yes.

'fraid I haven't experimented with smoking turkey yet, but here's a great ham recipe (I smoke on my grill, so you'll have to make the proper recipe adjustments...)

[b]Double Smoked Ham[/b]

6-8 lb ham with natural juices (with bone; I usually use a spiral-sliced ham)
2 cups BBQ Sauce (whatever brand you like. What I usually do is mix up a cup of Mesquite flavored and a cup of original flavored)
1/4 cup pure maple syrup
2 Tbsp lime juice
1 Tbsp lemon juice

Set ham cut side down in 9 x 13 pan. Heat grill to 200-250º. (note: to the folks with grills like me, to smoke I soak hickory chips for a half hour and make a packet of chips by wrapping them in aluminum foil and poking some holes in the package. Then I lay the packet on lava rocks). Set pan with ham in on top of grates. Smoke for 3-4 hours. Make sure grill gets no hotter than 250º. Mix together the sauces, syrup and juices. Pour over ham in the pan and return to the grill. Lower heat to no more than 200º. Smoke on grill for another 45 minutes to an hour.



This makes [i][b]great[/i][/b] ham!

i have smoked several turkeys......very good.....heres how i do it........

1. cover thawed turkey in corn oil (this will keep it from burning)
2. salt and pepper all over bird
3. place on grill breasts up
4. open beer........enjoy


(be sure to have a big fire.......it will take about 3 hours depending on how big the bird is.......i usually try to get around a 10 pounder)

btw.......heres one i tried this weekend and was great.....drunk chicken
1. cover whole thawed chicken in italian dressing and salt and pepper.
2. insert open, full beer into chicken so it stands up on the beer can
3. place on grill
4. open another beer......enjoy

this sounds weird, but it is really good........the beer gets hot and boils and cooks the bird inside out......meat just falls off the bone.......takes about an hour.

Drunken chicken sounds good. I'll have to try that for novel reasons if nothing else.

BIG DADDY

Preffers frying his turkeys cajun style.

For the Marinade:
2 tablespoons Worcestershire sauce
1 tablespoon liquid Zatarian’s Concentrated Crab and Shrimp Boil (optional)
1/4 cup apple cider
3/4 cup honey
1 (12-ounce) bottle beer
1 tablespoon salt
1 tablespoon ground allspice
1/2 cup Emeril's Creole Seasoning (Essence), recipe follows
1/4 teaspoon cayenne
Pinch ground cloves

For the Seasoning Mix:
1 cup salt
1 tablespoon cayenne
1 tablespoon freshly ground black pepper

To Fry:
2 turkeys (8 to 10 pounds each)
About 10 gallons peanut oil

To make the marinade: Combine all of the ingredients in a food processor or blender and process for about 5 minutes. Fill a syringe and inject each turkey in the breast and thigh area, as well as the back, wings, and legs. You will have to fill the syringe several times. Next, combine the seasoning ingredients and rub the mixture evenly all over each turkey.

Place the turkeys in large plastic bags and secure before icing them down or refrigerating them for 24 hours.

It's one of Emeril's recipes. They are awesome. Juicy, spicy, unbelievable.

Big Daddy, you listed a recipe for Emeril's essence but it doesn't match the one I have:


[i]Emeril's "Essence" Creole Seasoning (also referred to as Bayou Blast)[/i][list]
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme[/list]Combine all ingredients thoroughly.


It's good stuff...

Your correct. Somehow I didn't put that down. Have you ever had a fried turkey? I had no idea how good they were until I tried one last thanksgiving. I have cooked 3 of them since. Oooh yeah, I've had fried turkey a few times and loved it. We've contemplated getting a fryer for about a year now and I'm sure it's only a matter of time before we give in.

I noticed a few people frying turkeys at Arrowhead last fall and I thought that was a pretty good idea too...

I heard that fried turkey is outstanding. The fryers are inexpensive - I've been contemplating whether or not to purchase one.


Just read the Emerill recipe... that's it! I'm buying a fryer! :D

Fried turkey is amazing. Since Houston is so close to cajun country, most people fry theirs around the holidays. It can't be beat.

We really need a Chiefsplanet recipe page. I've seen some pretty amazing recipes posted out here but they always drop into oblivion. If the recipe threads were moved, they would be easily referenced later.

HC, just make sure you buy one of sufficient size (30+ gallons as I recall), and don't forget you have to buy large amounts of peanut oil, too.

Not really expensive, but like everything else, all the nickels and dimes add up in the end...

This is making me hungry. That's bad since I'm just starting a brand-new diet/exercise program

keg - what diet? Don't deprive yourself man... the daily exercise is what's most important. 'Caloric restriction' tend to work best - they take longer to show results, but they generally keep weight off - and actually boost your metabolism (equates to more energy) ;)

Those 'all protein', 'no fat', 'all carb' diets fail because they all END at some future point. Cal restriction diets never end - because you become accustomed to eating what you want - but paying more attention to the foods you put in your body.

It spits a little bit so either put some newspaper down or don't put it on cement. (stains) You really have to monitor the oil temperature as well. It is really worth the effort though as it is the best turkey I have ever had BY FAR. Crispy on the outside and SUPER juicy. The Cajun injection rocks if you like it a little spicy.
